I will end up with 1 ms sbs 2011 server vm, 1 win 7 desktop vm and 1 linux vm. The server has some initial cpu spikes, especially when you start up the admin tools. I have heard from a colleague that the cpu also spikes with a "normal" quadcore cpu. In regular operation the server cpu load will be very low. There will be enough cpu power for the win 7 vm. My plan is a simple esxi with whs2003 under it. My micro server has 8gb mem and 6tb storage. If you got esxi working w/ that raid controller I may end up going that approach.
